Quick capacity reference

  • Under-sink hydromechanical grease trap: typically 20 to 100 gallons; rated by flow (gpm) and grease-retention capacity in pounds.
  • Exterior gravity grease interceptor: typically 750 to 3,000+ gallons; rated by total liquid capacity and retention time.

The two systems use different sizing math, and the threshold for “you’ve outgrown this” is different for each.

Five Signs Your Kitchen Has Outgrown Its Current Trap

1. Pump-out intervals keep shortening

You started on a 90-day cadence. You’re now on 45 days. Next quote will be 30 days. That curve doesn’t mean your hauler is upselling — it means your trap is filling faster because the inbound load grew.

2. The 25% rule keeps tripping early

If the combined grease and solids layer reaches 25% of the trap depth weeks before the scheduled pump-out, the interceptor is undersized for your current load.

3. Your municipality flagged a discharge violation

A notice-of-violation letter or a failed FOG sample test almost always points to insufficient retention time inside the trap — a sizing problem, not a maintenance problem.

4. Drain backups during peak service

The trap fills mid-service and stops accepting flow, which sends greywater back up the dish pit drain. If this happens more than once a quarter, the unit is too small.

How to Right-Size the Next Interceptor

Sizing the replacement unit is a conversation between three parties: your plumber, your municipality’s pretreatment officer, and your grease hauler. Each one brings information the others don’t have.

What each party contributes

  • Plumber/engineer: drainage fixture unit count and flow calculations.
  • Municipality: minimum interceptor size allowed under the local pretreatment ordinance.
  • Grease hauler: real-world load data from your last 18 months of pump-out manifests.

That last piece is the one most often skipped. A hauler who has serviced your trap for two years knows whether your peak grease layer hits 25% in 30 days or 60 days — data no engineer can model from a fixture count alone. Make sure that information enters the sizing conversation.
